Irish Car Bomb Pops!

Happy St. Patty’s Day everyone!  Hope you all remembered to wear green to avoid the awkward pinches from strangers on the street.  I definitely remembered to wear green on this beautiful spring day in Arlington.  A green shirt, however, was not nearly enough to celebrate.  So I decided to whip up something that screamed St. Patrick’s Day… and what better way to celebrate this holiday of day drinking than with Irish Car Bombs.  Since I am not one that can chug a whole beer (yuck!) I decided to make this treat in popsicle form!!  It took a lot of work but was definitely worth the weeks of experimentation…

For those of you that haven’t experienced the late night bar mistake that is the Irish Car Bomb let me explain… The Irish Car Bomb starts with a pint of Guinness.  You are also given a shot of half Irish Whiskey and half Bailey’s Irish Cream.  You put the shot in the pint and chug the whole concoction.  This becomes increasingly difficult as the difference in acidity between the beer and the Bailey’s causes the Bailey’s to curdle quickly so if you don’t drink fast you are left with quite a disaster (not to mention the mockery of your friends and bar mates).  
Making the pops without curdling the milk (gross!) took a lot of work… and a lot of curdled milk!  But after reading up on the acidity problem I was able to find a fix.  These actually use Bailey’s flavored coffee creamer in place of the shot of Baileys.  One simple fix, one DELICIOUS pop 🙂  Just be careful not to over celebrate with these alcohol heavy pops.


Ingredients
yields 4 pops
1 cup Guinness
2 T. Bailey’s flavored coffee creamer
2 T. Irish Whiskey
2 T. half and half
1 T. chocolate syrup

Directions
1) Pour the Bailey’s coffee creamer, half and half, whiskey, and chocolate syrup into a small bowl and whisk together.  Slowly pour in the Guinness and whisk together quickly to avoid curdling.

2) Pour pop batter into pop molds and freeze.  These will take slightly longer than normal pops to freeze due to their alcohol content.

::CAUTION:: Don’t eat them too fast – you aren’t at risk of curdling but could get a wicked brain freeze if you eat it too quick!! 🙂

    Sound yummy Liz! We were just out at a restaurant that was serving Irish Car Bombs…had never heard of them except for in the news in Belfast =) …I will have to give these a try! Is Nick passed out from the “taste testing” ?

    Hehehe – Yeah they definitely are fun. Nick has been tasting these for about a month now while I tried to get the recipe right so I imagine he is pretty car bombed out for a while!! 🙂
